Preparation and Infusion
Be sure to take the time to find the purist water possible. Soft mineral water, completely free of chlorination is essential in brewing great Sencha Green Tea. Choose your favorite Yunomi and prepare to relax, body and mind.

This Sencha is ideal for creating special moments in the midst of our all too often hectic days. Tsutsumi can be brewed at higher temperatures and is remarkably rich even on a third infusion.
Crystal-clear water, Kyusu, your favorite Yunomi prepared, lets get to the infusion.
Slowly pour boiling water into you Kyusu. This will pre-heat the Kyusu and allow the water to drop 10 degrees Celsius from between 90-100 degrees Celsius to approximately 80 degrees Celsius. Each subsequent pouring will cool the water by 10 degrees Celsius.
Now pour from your Kyusu into each Yunomi. Add the pre-measured dry tea leaf to the Kyusu, then pour the water from the Yunomi back into the Kyusu. The water will be approximately between 70-80 degrees Celsius.
When pouring the infused tea, carefully distribute the liquor from one cup to the next in turn, little by little until the last rich drop drips blissfully into the final cup.
For a second and third infusion, hotter water can be added as the leaves are already open within the teapot.
