Although each and every variety of tea comes from the Camellia sinensis plant, the individual color, fragrance, and flavor will vary widely depending on the growers particular treatment of the picked leaves.
Once picked, green tea leaves are heat-treated to prevent further oxidation, then dried. It is that simple! Light-steaming, Asamushi, of the fresh picked leaves creates an jade-toned infusion of incredibly purity, with phenomenally balanced umami and Sencha astringency. Deep-steaming, Fukamushi, of the leaves yields a gorgeous sweet-emerald liquor, rich in sweetness and creamy mouthfeel.

The Yamanien Environment
Camellia Sinensis tea shrubs are native to southern Asia and are best cultivated in warm climates that have ample rainfall and slightly acidic soils that are well-drained and regularly replenished with fresh water. The unique location of our estate provides the ideal growing conditions for our superior harvest.
Yamanien Gardens and Estate is situated on the sloping foothills of Mt. Fuji. We are incredibly fortunate to be blessed with an ideal micro-climate environment combining year-long sunshine, generous rain, mountain run-off and crystal-clear spring-fed hydration and irrigation from the highest peak of Fuji-san and nearby Mt. Ashitaka into Suruga Bay.
Nature has provided Yamanien with the perfect growing environment for our tea. As artisans, we look to expand and build upon what we have been given in order to cultivate the finest Sencha Green Tea possible.
For centuries, care and protection of soil has been the lifeblood of our estate. Today is no different as we recycle all of the unused organic matter from our green tea fields into our soil and mulch. Cooperating with our local growers, we have perfected a moderately acidic, high mineral soil that allows for maximum drainage and replenishment of rainfall and mountain run-off.

All of our Camellia sinensis shrubs are cultivated onsite from shoots of our award-winning Kumonoseki tea plants and raised in our unique soil mixture in high-elevation woodland clearings that provide the maximum daytime sunshine and hydration with natural morning and evening shade to encourage strong and more importantly, slow growth.
It may take 5-6 years for our tea plants to fully mature, but the results are well worth the wait. Densely rich shrubs of vibrant green, bursting with complex aroma, sweetness, and umami richness are now ready to produce the soft, tender buds and leaves that go into our Premium Sencha Green Teas.

Yamanien Premium Sencha undergoes a careful shading process in the final 20-25 days before harvest which provide us with an opportunity to slow the process of photosynthesis, and allow the new leaves to dramatically increase their natural sweetness, enriching the new buds with essential amino acids which gives our Premium Sencha Green Teas its uniquely intense aroma and luxurious umami character.

To honor this relationship and to raise the level of Sencha excellence, we have produced a method of cultivation that not only ensures the most pristine environment for our plants, but also allows us to produce the most incredibly flavor-intense, complexly-rich Sencha Green Tea imaginable.
Our Kumonoseki Award-winning Sencha is grown in an enclosure that provides us with the unique opportunity to harness all of the environmental factors that Shizuoka is famous for, (namely its sunshine filled days, crystal-clear water, natural drainage, and clean air) and modify the immediate environment of our tea plants to encourage its Natural Finish and overall health and vitality of the plants.
Shizuoka is blessed with some of the best green tea growing conditions in all of the world, but to cultivate the very best Sencha Green tea requires a deep understanding of the local conditions, the needs of the plants and a precise awareness of timing that is required in each stage of the growth cycle.
Our controlled environment can limit the degree of direct sunlight when required and shade the plants up to 90% prior to harvest.
We are also capable of raising the air temperature within the enclosure creating an extended growth season while manually warming the root system of the plants to stimulate capture and intensity of mineral and water uptake.
The result is a wonderfully aromatic Sencha with a mysteriously nourishing and indescribably sublime finish.
